What qualification do I need for a job in restaurant service?

The classic route is the EFZ as a Restaurant Specialist, but career changers with an EBA or years of practical experience also find employment - what matters is how you document your qualification.

The three-year apprenticeship leads to the EFZ as a Restaurant Specialist, while the two-year track leads to the EBA as a Catering Assistant. Write out the qualification exactly like this, including the vocational school and year, because hospitality HR managers immediately read your L-GAV classification from it. If you trained abroad, state the original title and add whether recognition by the SBFI is pending or has been granted.

For management positions, the professional examination is expected: Restaurant Manager with a Federal Professional Certificate or Chef de Service, followed by the higher vocational college qualification as Hôtelier-Restaurateur HF. If you are only planning further training, state this transparently, for example "Professional Examination for Restaurant Manager planned for 2026". For businesses running their own establishment, the cantonal Wirtepatent is also relevant - in Zurich this is the Hospitality Industry Certificate of Proficiency, named differently in other cantons.

Without a formal qualification, you can convince employers with verifiable years of practical experience and certificates: HACCP hygiene training, WSET or a sommelier course from the Swiss Sommelier Association, SCA Barista Skills, or youth protection training for serving alcohol. It's important not just to list the courses in your CV, but also to state the type of establishment: 30 covers in fine dining is a different profile from 180 lunch guests in a brasserie.

How do I present my work experience in restaurant service convincingly?

For each position, describe the type and size of the establishment and your figures, instead of listing tasks like "serving guests".

For each position, state the context: number of indoor and terrace seats, covers per service, type of establishment (à la carte, banquet, half board, chain catering), any GaultMillau or Michelin recognition, and your position within the brigade system, i.e. Commis de Rang, Demi-Chef de Rang, Chef de Rang or Chef de Service. This information places your profile within a few seconds.

This is followed by three to four bullet points with figures. Good measurable indicators include the average bill, wine revenue per cover, table turnover, occupancy, cash discrepancies, Google rating, the number of employees and apprentices led, and overtime and turnover figures. Phrase the effect: "Increased the average bill from CHF 68 to CHF 79" is stronger than "sales-oriented service".

Seasonal positions are normal in the Swiss hospitality industry and not a drawback - label them as winter or summer season with month details so that no gaps are assumed. Also mention your availability for evening, weekend and public holiday shifts, your driving licence for establishments with poor public transport connections, and your language levels, since every guest interaction in service happens through language.

How long should the CV be, and is a photo required?

Two pages, a friendly portrait photo and the typical Swiss details on permit, availability and references are the standard in the hospitality industry.

Keep your CV to a maximum of two pages. If you have had many seasonal positions, combine older assignments into a single block, "Further seasonal positions 2012 - 2015", and describe only the last three positions in detail. A photo is common and expected in the Swiss hospitality industry, since guest contact is part of the job: well-groomed, friendly, in work attire or a shirt/blouse - not a holiday snapshot.

In the header, include your place of residence, nationality or residence permit (B, C, G for cross-border commuters), phone number in the format 079 000 00 00, and your email address. State your earliest possible start date and your notice period - in hospitality, hiring for the next season is often done at short notice. Salary expectations belong only in the cover letter if requested; as a guide, the L-GAV minimum wages apply, and a Chef de Service earns between CHF 60'000 and CHF 72'000 per year depending on the establishment.

Leave out marital status, religion and information about children. Two references with their role and phone number, on the other hand, are very effective, since checks in hospitality are often done quickly by phone - ask for permission beforehand. Save your documents as a single PDF, named for example "CV_Brunner_Nadia.pdf", and attach copies of your reference letters as well as your Wirtepatent or hygiene certificate.

Nadia Brunner

Chef de Service · Restaurant Specialist EFZ · Restaurant Manager with Federal Professional Certificate

Restaurant Specialist EFZ with 9 years of experience in à la carte establishments, banquets and summer terrace service. As Chef de Service, I lead a team of 12 employees and 3 apprentices across 150 seats and am responsible for shift scheduling under L-GAV, the wine list and tronc accounting. My focus is on active table-side selling: under my leadership, the average bill rose from CHF 68 to CHF 79.

What sets me apart

Table-side selling instead of just order-taking: Structured recommendations for aperitifs, wine by the glass and dessert; increased wine revenue per cover from CHF 11 to CHF 15.

Guéridon service and classic dishes: Carving, filleting, flambéing and decanting at the table - including training 8 employees to guéridon standard.

Shift scheduling within the L-GAV framework: Monthly schedules for 12 people including time tracking, 5-day week and holiday entitlements; reduced the team's overtime balance by 340 hours per year.

Hygiene and allergens under control: Updated the HACCP self-monitoring concept for the service area; passed two food safety inspections without complaints.

Key achievements

Average bill from CHF 68 to CHF 79. Sales training, a revised daily menu and a 5-course wine pairing led to +16% revenue per guest over 18 months, with the same number of guests.

Google rating from 4.3 to 4.7. Table-side complaint handling and defined service standards; 850 reviews, reduced guest comments about waiting times by 60%.

Staff turnover halved. A 4-week onboarding plan and fixed days off reduced staff turnover in service from 8 to 4 departures per year; 2 apprentices completed their training with a grade above 5.0.
